Every other Friday, Coleman's teacher schedules a parent to come in and do an activity of the parent's choosing. I signed up for today to go in and read a Groundhog Day book, do a craft and a snack. I always take Groundhog shaped gingerbread cookies (because, yes, I have a groundhog cookie cutter that I bought when we went to Punxsutawney!)
Last night, I made my dough. It has to chill in the refrigerator for an hour before making the cookies. Well, one thing led to another and I didn't get back to it. This morning, I pulled the dough out and it was as hard as a ROCK. I left it out to thaw, but it never did! I've made this recipe many times; I'm not sure exactly what happened, but I needed a plan B!

Groundhog Snacks
1 powdered sugar donut
1 fun size Milky Way bar
2 brown mini M&Ms
melted chocolate chips for "glue"
Pipe melted chocolate in middle of candy bar and glue brown M&Ms for cheeks.
Pipe two dots of chocolate for eyes and a dab for nose. (If I had mini choco chips, I might have used these for eyes-it would have been easier.)
Stick candy bar in middle of powdered donut (i.e. snowy hole!)
I ran around like a maniac this morning to get this ready for Coleman's class this afternoon. So wouldn't you know? An hour before I was supposed to be there, I got the dreaded phone call from the school nurse. Carolyn was running a fever and could I come and pick her up? So now we are rescheduled for Monday.
After some Tylenol and a nap, Carolyn is feeling much better! We'll see what tomorrow brings, but hopefully it is just a 24 hour thing.
