I made cadbury egg cupcakes today. Mmmmm!
I used a chocolate fudge cake mix and after mixing per the directions, put one mini cadbury egg in each of the cupcakes.
Freeze the chocolate eggs, so they don't melt and lose their consistency in the hot oven. Did you know that if you put the eggs in a ziplock bag and coat them with flour they won't sink to the bottom of your cupcake and burn? (This also works with blueberries, etc. when you are making muffins.)
Top with homemade butter cream icing. (Once you've made homemade butter cream, you will never eat that stuff in the can again!)
What a yummy surprise inside a yummy cupcake!
I know some littles that are going to be very happy when they get off of the school bus today!
