Sweet Potato Casserole

This is my Memo's recipe for Sweet Potato Casserole. I'm not going to lie to you, it is heaven on your fork!  As you know, my memo is a fantastic Southern cook!  It wouldn't be Thanksgiving without it...don't you wish you were spending the holiday with us?

Sweet Potato Casserole
3 cups yams (fresh or canned) (if canned, a 40 oz. can)
1/2 cup sugar
2 eggs
1 tsp vanilla
1/4 cup milk
1/2 cup soft butter

Topping (no stupid marshmellows here!)
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup butter, softened (not melted)

Drain and mash the yams, then add the rest of the ingredients.  For topping: Mix brown sugar, flour and pecans, then cut in butter and spread on top of sweet potatoes. Bake in a 2 quart dish at 350 degrees for 30-40 minutes.

It's worth the extra hour on the stairmaster, I promise!
