It's Famous 'Round These Parts

Today is Jim's birthday, but I am going to give YOU a present from him!

It's famous for a reason... it's THAT good.  This is for you, Kim!

Jim's Jambalaya
1 lb bacon
2 lbs smoked sausage  
2 lbs cooked chicken, chopped  
3 lbs onions, chopped 
2 tsp garlic 
3 bell peppers (red, green, yellow), chopped 
1 cup celery, chopped 
1 cup green onions, chopped 
1 ½ oz of liquid smoke 
1 ½ oz Lee and Perrins Worcestershire 
4 oz Louisiana hot sauce 
Season All to taste 
½ cup parsley 
4 cups long grain rice-do not wash 
8 cups chicken stock 
12 pack of Miller Lite (2 for the jambalaya-10 for the cook) 

Cook bacon in a 10 quart iron pot until crispy, and then add onions until cooked.  Add peppers, celery, green onions, parsley then garlic.  Once all above are cooked down, add chicken stock and bring to a boil.  Once this begins to boil, add chicken and sausage and return to boil.  Add liquid smoke, Lee and Perrins, hot sauce and Season All.  Add 2 Miller Lites and rice and stir.  Continue to stir until rice is still crunchy, but not totally cooked.  Reduce fire to low, cover pot and let simmer for 35 minutes.  Do not open pot during this time.  Should serve 20 people, maybe more…
